Most of the work on this book explains the origins and growth of meat Niman Ranch – a description of methods used by small businesses and farmers are to increase their meat used to be sold under the brand Niman Ranch. The book is usually far away from preachiness, which descriptions are surprisingly well thought out and monitored (eg, a discussion of nitrates and their presence in the atmosphere – where most of the nitrates we consume comes from). Much of the text is just advertising for the brand Niman, but the concern of the most interesting part of life and methods of small farmers. A small section at the end contains some very creative recipes of the regulars Niman Ranch products – mainly of two ribs (including those not, inexplicably, a recipe very attractive, “Chipotle” belong – to McDonald’s – a chain that I am more likely actually use Niman products).
If you can, but Niman Ranch pork is excellent.
